Santa Fe and San Miguel County area restaurants, local farmer’s markets, local grocery stores and local commercial accounts are in constant need of ingredients that are high quality, in large quantities and consistently available throughout the year.
Many of these places grow what they can themselves but are limited in land, water and facilities necessitating the need to obtain these ingredients from commercial providers, which are far from local. This results in ingredients that are of lower quality, less nutrient dense and harvested early requiring ripening during the transportation process.
